The yeast from fermentation, however, becomes a sediment in the bottle and must be removed before sending the bottle to market. In the meantime, the longer the yeast stays in the bottle, the more it affects the flavor of the wine. The yeasty, toasty flavors that develop are the primary characteristic of this type of wine, and some sparkling wines may age for years on the lees (yeast sediment) to maximize these flavors.

The yeast is eventually removed by causing it to settle in the neck of the bottle, freezing just the neck, and opening the bottle so the pressure pushes the frozen plug out. The wine is then topped up with more wine and usually a small amount of sugar—for sweetness this time, not for fermentation.
